Whole wheat noodles, eggplant and kale make a high-fiber tasty lasagna.

Recipe Ingredients for Vegetable Lasagna

8 oz. Hodgson Mill whole wheat lasagna
26 oz. Classico fire-roasted tomato and garlic sauce
15 oz. Sargento light ricotta cheese
1 egg
8 oz. Kraft Natural shredded mozzarella cheese
2 lbs eggplant
2 cups kale, shredded
2 tbsp. olive oil
1/8 tsp salt

Recipe Directions for Vegetable Lasagna

  1. Saute kale in 1 tbsp of olive oil in olive oil until wilted (sprinkle with a pinch of salt to bring out the water). Remove from skillet and drain. Set aside.

  2. Cut eggplant lengthwise into 1/4" slices. Sprinkle with remaining salt and let sit for 10 minutes. Rinse and dry.

  3. Add remaining oil to skillet and eggplant slices over a medium heat. Cook for 2 minutes, turn and cook another 1-2 minutes until eggplant softens.

  4. Beat egg and mix with ricotta cheese. Set aside.

  5. Add 1 cup of sauce to the bottom of a glass 13" x 9" baking dish. Add 1/2 kale mixture and spread over the sauce.

  6. Lay one third of noodles on top of sauce/kale. Add 1/3 of ricotta mixture. Add 1 cup of sauce. Add remaining kale. Sprinkle with 1/3 mozzarella.

  7. Lay 1/2 remaining noodles on top and press in place. Add 1/3 of ricotta. Layer eggplant over cheese. Sprinkle with 1/2 remaining mozarella and 3/4 cup of sauce.

  8. Add remaining noodles and press in place. Add remaining ricotta and sauce. (Reserve remaining mozarella.)

  9. Cover with foil and bake for 45-60 minutes. Remove foil and sprinkle with remaining mozarella. Bake an addtional 10-15 minutes or until cheese is bubbly and browning.

  10. Remove from oven and allow to cool for 15 minutes before serving.
