1 cup mushrooms 1 cup sliced carrots 2 cloves garlic 2 tbs olive oil 1 cup red pepper 2 cups zucchini 1 cup onion 1/2 cup wine 4 cups tomato sauce 1 cup ricotta 1/4 cup grated parmesan 2 tbs pesto 2 oz provolone cheese 8 oz lasagna noodles

Recipe Ingredients for Vegetable Lasagna

1 cup mushrooms
1 cup sliced carrots
2 cloves garlic
2 tbs olive oil
1 cup red pepper
2 cups zucchini
1 cup onion
1/2 cup wine
4 cups tomato sauce
1 cup ricotta
1/4 cup grated parmesan
2 tbs pesto
2 oz provolone cheese
8 oz lasagna noodles

Recipe Directions for Vegetable Lasagna

  1. Saute

  2. 1 cup mushrooms

  3. 1 cup sliced carrots

  4. 2 cloves garlic

  5. 2 tbs olive oil

  6. 1 cup red pepper

  7. 2 cups zucchini

  8. 1 cup onion

  9. add 1/2 wine and simmer until reduced

  10. add 2 cups tomato sauce

  11. simmer 20 min

  12. mix 1 cup ricotta

  13. 1/4 cup grated parmesan

  14. 2 tbs pesto

  15. cook noodles until soft

  16. layer in 8 X 8 X 8 pan

  17. veggies, pasta and cheese

  18. top with provolone

  19. back 1 hr @ 325
