Makes 6 servings



Preheat oven to 350 degrees. In a 8 inch backing dish cover with 1 oz of cooking oil. Gently saute the chopped onion over medium heat until soft 1 oz of cooking oil. about 10 minutes. peel and corsly shread the potatoes, squash and carrots into a large bowl and add the onions. Chop the parsley and add to the mix. Add the 3 eggs, salt, pepper and paprika and mix well. Place the baking dish in the oven to preheat for 5 minutes. Scrape the mixture into the hot dish. Bake for 1 hour until set and browned on top. Let rest 5 minutes before cutting and serving..

Although this food is symbolic of Hanukkah you can enjoy it through out the year.
