Recipe Ingredients for Vegetable Kashmiri

2 tsp. cumin
8 black peppercorns, ground
1 tsp. ground cardamom
2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 tsp chili powder
1/2 tsp. salt
3 tbsp. oil
1/4 cup fresh green chile, chopped
2 tbsp. fresh ginger, grated
2 large potatoes, cut into inch chunks
8 oz. cauliflower, broken into florets
8 oz. okra, thickly sliced
2/3 cup vegetable broth
2/3 cup plain yogurt
2 tbsp toasted sliced almonds, for garnish
2 tbsp cilantro, for garnish

Recipe Directions for Vegetable Kashmiri

  1. Mix spices together ensuring ground to a fine powder.

  2. Heat oil in a large saucepan and cook the chile and ginger for 2 mins stirring constantly.

  3. Add the spice mixture and cook for 2-3 mins, stirring constantly to prevent spices from sticking to the pan.

  4. Stir in potatoes, cover and cook for 10mins over low heat, stirring occasionally.

  5. Add the cauliflower and okra, cook for 5 mins.

  6. Add the yogurt and broth, bring to a boil, then reduce heat.

  7. Cover and simmer for 20 mins. or until all the vegetables are tender.

  8. Garnish with almonds and cilantro sprigs.
