This bright, tasty hash is delicious over a poached egg and it can also be turned into omelet filling. Use and dried herbs to taste.

Recipe Ingredients for Vegetable Hash

1 small Peppers, Sweet, Red
1 small Onions
1 cup, pieces or slices Mushrooms
2 small Squash, Summer, Zucchini, Includes Skin
1 clove Garlic
1 tbsp Olive Oil

Recipe Directions for Vegetable Hash

In a large skillet, heat oil over medium-high heat. Add onion, thyme, and paprika, reduce heat to medium low and cook stirring occasionally, 7 minutes or until onion is softened. Stir in salf, bell pepper, mushrooms, zucchini and garlic. Cover and cook stirring occasionally, 4 minutes. Remove from the heat and serve hash by itself or with a poached egg.
