Recipe Ingredients for Vegetable Hash and Egg

1 spray Pam
1 oz chopped onions
1 oz chopped green pepper
1 oz chopped red pepper
1 oz chopped mushrooms
1 oz chopped zucchini
1 oz chopped Canadian bacon
1 tsp minced garlic
1 T chopped parsley
1 pinch salt and pepper
2 T low fat cheese
1 egg

Recipe Directions for Vegetable Hash and Egg

  1. Saute all vegetables, garlic, and bacon until soft in Pam spray over medium heat.

  2. Season with salt and pepper. Add parsley and stir. Sprinkle cheese on top of hash. Place fried or poached egg on top.
