Great way to eat your veggies. Using home made soup stock or low sodium broth makes it even better.

Recipe Ingredients for Vegetable, ground beef soup

1 lb Beef, Ground, 90% Lean Meat / 10% Fat, Crumbles
1 large onion
2 cups Beef Broth
16 oz frozen mixed vegetables
13 oz Tomatoes, Red, Ripe Canned, With Green Chilies
13 oz Tomatoes, Red, Ripe Canned, Whole, No Salt

Recipe Directions for Vegetable, ground beef soup

  1. brown onion and ground beef in soup pot

  2. add soup stock/broth, choose low sodium if using can or cube stocks. (I often use homemade - no salt -veggie & bones stock)

  3. add the cans of tomatoes

  4. I add about 4 broken bay leaves for flavor

  5. Let this simmer a while, then I remove the bay leaves

  6. add bag of frozen mixed vegetables

  7. heat until vegetables are cooked

  8. very nice with a piece of whole wheat toast
