Vegetable Gratin Recipe

Makes 4 servings



Pseudo-creamy butter sauce for potato gnocchi or heavy pasta.

Recipe Ingredients for Vegetable Gratin

1 cup skim milk
1 tbsp unsalted butter
3/8 cup Parmesan cheese, shredded
1 1/2 cup diced tomatoes
1 cup spinach, cooked, drained, without salt
1 tbsp corn starch
1 cup diced onion, red
8 oz. diced mushrooms
1 cup chopped broccoli

Recipe Directions for Vegetable Gratin

  1. Whisk corn starch into milk.

  2. Add butter, bring to simmer over medium heat.

  3. When hot, stir in half cheese and cook until melted.

  4. Meanwhile, cook vegetables in 1 tbsp water over high heat. When tender, mix into sauce.

  5. Pour over cooked gnocchi and sprinkle remaining cheese. Also good baked for ten minutes at 350 before serving, but not necessary.
