Recipe Ingredients for Vegetable: Garlic Roast Potatoes

3 lb. potatoes
4 T. olive oil
1 tsp. salt, to taste
1 tsp. pepper, to taste
1 T. garlic salt, to taste (Johnny's Garlic Spread & Seasoning from Costco is good, but any strong garlic seasoning will do.)

Recipe Directions for Vegetable: Garlic Roast Potatoes

  1. Preheat the oven to 425F.

  2. Peel the potatoes and cut them into even-size chunks (the size you prefer). Cook potatoes in boiling salted water over medium heat, covered, for 5-7 minutes. They should still be firm.

  3. While the potatoes are boiling, pour the oil into a roasting pan and place in the hot oven.

  4. Remove the potatoes from the heat, drain well, and return them to the pan. Cover with the lid and firmly shake the pan so that the surface of the potatoes is roughened (this helps to give a much crisper texture).

  5. Remove the roasting pan from the hot oven carefully and tip the potatoes into the hot oil, basting them carefully to make sure that they are all covered with oil. Sprinkle with salt, pepper, and garlic salt.

  6. Put the pan back into the oven and roast at the top for 45-50 minutes until the potatoes are browned all over and thoroughly crisp. Turn the potatoes once only during the process or the crunchy edges will be destroyed.

  7. Transfer the potatoes from the roasting pan carefully into a hot serving dish. Sprinkle with a little more garlic salt and serve immediately.
