Recipe Ingredients for Vegetable Garbanzo Soup

1 leek, chopped
1/2 large onion, chopped
1 cup celery, chopped
3 cloves garlic, minced
2 zucchini, chopped
1 yellow squash, chopped
3 cups canned tomatoes, stewed
1 1/2 cup garbanzo bean
1 cup basil, chopped
9 cups water
1 tsp. olive oil

Recipe Directions for Vegetable Garbanzo Soup

Saute leek, onion, celery & garlic in olice oil until soft. Add in squash & zucchini and cook 8 more minutes. Add tomatoes & basil, saute for a few more minutes. Season with crushed red pepper & assortment of your favorite spices. Add water & bean simmer for 30-45 minutes until it starts to reduce.
