Vegetable Frittatta with Parmesan

Recipe Ingredients for Vegetable Frittatta with Parmesan

2 tbl margarine
1 medium onion
2 medium zucchini
4 large mushrooms
1/2 large red bell pepper
1/2 tsp salt
1/4 tsp dried thyme
1/4 tsp red pepper
4 large eggs
1 cup egg substitute
5 1/2 tbl grated Parmesan cheese

Recipe Directions for Vegetable Frittatta with Parmesan

  1. chop vegetables

  2. beat eggs and egg substitute

  3. saute vegetables in oil

  4. add eggs to vegetables and stir

  5. cook to set bottom

  6. sprinkle with Parmesan

  7. place skillet under broiler for 2 minutes

  8. divide and serve
