Found this in a post on this website, I think. Haven't made it yet but looks good!

Recipe Ingredients for Vegetable Frittata

10 oz frozen spinach, broccoli, or zucchini
1 garlic clove, minced
1 small onion, diced
5 oz mushrooms, sliced
2 egg whites
1/4 cup Parmesan cheese

Recipe Directions for Vegetable Frittata

  1. Saute garlic, onion, and mushrooms on medium heat. Add spinach (or broccoli or zucchini) and mix together.

  2. Place in a pie plate and add egg whites (or 1 egg) and Parmesan cheese. Mix, pat flat. Bake 15 mins.
