Essentially an oven omelet, modified from the Enchanted Broccoli Forest cookbook, page 178

Recipe Ingredients for Vegetable Frittata

1 t olive oil
1/2 c minced onion
3/4 t salt
1 pinch of dried oregano, thyme, garlic, basil
1 c diced zucchini
2 c chopped swiss chard
5 eggs
2 oz Monterey Jack Cheese (oz)

Recipe Directions for Vegetable Frittata

  1. Preheat oven to 375 F.

  2. Heat oil (or water) in 10-inch cast-iron skillet. Add onion and half the salt and saute over medium heat for about 5 minutes.

  3. Add dried herbs and zucchini and cook, stirring, over medium heat for another 5 minutes or until vegetables are tender. (Note: you can also add other veggies - recipe includes 8-10 sliced mushrooms and 1/2 c minced bell pepper added at this step but I didn't have these ingredients.)

  4. Turn the heat up and add chard or other greens with remaining salt and pepper to taste. Stir and cook for a minute or two.

  5. Beat the eggs in a separate bowl, then pour them into the vegetables. Sprinkle in cheese.

  6. Place the pan in the preheated oven for about 10-15 minutes, or until the frittata is solid when you shake the pan. If you want, you can add extra cheese on top, midway through baking.

  7. Serve cut into wedges. Good hot, warm or at room temperature; also good cold on toast with tomato and a little mayonnaise.
