Recipe Ingredients for Vegetable Frittata

3 tablespoons vegetable oil
1 zucchini, chopped
1 c mushrooms, chopped
1/4 onion, chopped
1 c broccoli, chopped
1 clove garlic, minced
1/2 c tomatoes, chopped
6 eggs, beaten
2 cups 1% cottage cheese
1 teaspoon salt
1/4 teaspoon ground black pepper

Recipe Directions for Vegetable Frittata

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.

  2. In a large skillet or frying pan, heat oil over medium high heat. Add zucchini, mushrooms, onion, broccoli and garlic; saute until tender.

  3. Mix in tomatoes. Remove from heat and let cool slightly.

  4. In a large bowl, beat together the eggs. Stir in cottage cheese and vegetables. Season with salt and pepper.

  5. Mix well and pour into prepared baking dish.

  6. Bake in preheated oven for one hour, or until center is set. Serve hot or cold.
