Recipe Ingredients for Vegetable Frittata

8 Egg, White
3 cup Milk, Nonfat, Fluid
1 pinch Salt, Table
1 pinch Pepper, Black
4 cloves Garlic
1 cup Cabbage, Chinese (Pak-choi)
1 cup Tomatoes, Red, Ripe
1/2 cup scallions
1 cup chopped zucchini

Recipe Directions for Vegetable Frittata

  1. Line and stack deep pie plate with vegetables.

  2. Combine and whisk together the eggs, milk, herbs, scallions, pepper and salt. Pour mixture into pie plate with veggies.

  3. Bake in a moderate oven (180C) for 40 minutes, then optional sprinkle with extra cheese and place under griller until golden.

  4. Serve as a warm meal of refrigerate for later! Yum.
