Recipe Ingredients for vegetable frittata

1/4 c eggplant
1/4 c tomato, roma
1/4 c mushrooms
1/4 c onion
2 eggs
1/4 c skim milk
1 tsp basil, fresh
1/2 tsp olive oil

Recipe Directions for vegetable frittata

Saute first 4 ingredients in the olive oil, whisk milk, basil and eggs together, pour over sauteed vegetables, heat till set on med heat, salt & pepper to taste
