Recipe Ingredients for Vegetable Frittata

2 eggs
3/4 cup egg substitute
1 tbl 1% milk
1 cup tomatoes, chopped
2 cups frozen broccoli, chopped
56 g (1/2 cup) shredded mozzarella cheese1 tsp Italian seasoning
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp crushed red pepper

Recipe Directions for Vegetable Frittata

  1. Preheat oven to 350-degrees. Spray muffin tins with non-stick cooking spray.

  2. In medium bowl, combine eggs, egg substitute, and milk,.and beat.

  3. Add vegeables, cheese and seasonings; stir well.

  4. Pour into muffin tins. Bake about 15 minutes, or until eggs are "set."

  5. Serve.

  6. Stores well - reheat in microwave for a great-tasting, nutritious breakfast on the go!
