Vegetable Frittata and Hash Browns

Recipe Ingredients for Vegetable Frittata and Hash Browns

560 g white potatoes, peeled and grated
80 g button mushrooms, sliced
50 g spinach, roughly chopped
1/2 medium sweet onion, thinly sliced
2 scallions, chopped
50 g grape tomatoes, halved
1 1/2 cups eggbeaters
50 g reduced fat cheddar cheese , shredded
1 tbls olive oil
2 pinches kosher salt
2 pinches black pepper, freshly ground

Recipe Directions for Vegetable Frittata and Hash Browns

  1. For the hash browns: Peel and the grate potatoes and thinly slice or grate the onion

  2. Squeeze as much liquid out of the potatoes as possible

  3. Combine and season with salt and pepper and form into flattened patties like you would a hamburger and cook on a flat-top griddle or in a non-stick skillet turning occasionally until golden

  4. For the frittata: Chop the scallions, peppers and spinach and slice the mushrooms and tomatoes

  5. Sauté them in the olive oil and season with salt and pepper (add the spinach near the end as it only needs to wilt slightly)

  6. Add the eggbeaters and leave to set over medium-low heat

  7. Top with the shredded cheese and finish under the broiler
