A frittata packed with veggies and given a taste boost with herbs

Recipe Ingredients for Vegetable Frittata for 2

37 g barilla wholegrain spaghetti
10 g extra virgin olive oil
90 g tomatoes, chopped
75 g mushrooms, chopped
70 g sweet red peppers, sliced
15 g leeks, thinly sliced
20 g frozen spinach, defrosted & drained
183 g eggs, whole (3 large)
80 ml lowfat milk
1/4 tsp salt
1/8 tsp lemon pepper
1 pinch dried thyme
1 pinch oregano
1 pinch rosemary
1/2 tbsp dried chopped chives

Recipe Directions for Vegetable Frittata for 2

  1. Break spaghetti into shorts lengths, cook and cool by running cold water over it in a sieve.

  2. Heat oil in a medium frying pan on medium heat and sauté leeks and peppers till just beginning to soften.

  3. Add in mushrooms and spinach. Cook till mushrooms soften.

  4. Whisk eggs and milk together till frothy. Pour into frying pan and stir. Season and add in herbs. Cover and cook till only slightly soft/runny on surface (or fully cooked if that's your preference).

  5. Serve warm or cold/room temp with buttered thick-cut bread, a side salad/coleslaw, (sweet potato) chips.....
