Best with fresh veggies in spring / summer -- but almost as good with frozen veggies during the cold months.

Recipe Ingredients for Vegetable Fritatta

3 eggs
1/2 cup egg substitutes
10 ounces broccoli
1 ounce shallot
3 ounces whole kernel corn
3 ounces carrot
1/4 cup milk
1 t butter
4 ounces cheddar cheese

Recipe Directions for Vegetable Fritatta

  1. Lightly butter a non-stick skillet or fritatta pan with the butter. Preheat oven to 400.

  2. Grate or crumble the cheese. Chop broccoli to about 1/4 to 1/2 inch pieces. Grate the carrot. MInce the shallot. Toss in a bowl with the corn and half the grated cheese, and set aside.

  3. Whisk together eggs, egg beaters, milk, and salt/pepper to taste.

  4. Add veggie mix to the pan and top with remaining cheese, then pour the egg mixture over it. Cover and cook (med heat) on stove until all ingredients are hot (no stirring) then place the entire pan in the oven and cook at 400 for 10 minutes, then reduce the oven to 350 degrees and cook for another 25-35 minutes until firm throughout and lightly browned on top. Serve with toast.
