Vegetable Fritatta Recipe

Great brunch dish that doesn't break you! Serve with a green salad or fruit salad, and some multigrain bread.

Recipe Ingredients for Vegetable Fritatta

6 eggs
2 tablespoons 1% milk
2 small red potatoes
1 cup chopped red pepper
3 cups fresh spinach
3 Onions, Spring Or Scallions
1/2 tomato
1 tbsp basil leaves, dried
1 salt and pepper
3 tablespoons parmesean cheese

Recipe Directions for Vegetable Fritatta

  1. Whisk eggs, milk (and a few tbsp of water, if desired). Add basil and salt and pepper. Set aside.

  2. Lightly oil a medium skillet with slopped sides.

  3. Chop potatoes into small pieces and gently cook them in the skillet for 2-3 minutes.

  4. Add the spinach and onions to the pan and turn the mixture over a few times to slightly wilt the leaves.

  5. Reduce the heat to medium and add the egg mixture to the pan.

  6. Add the red pepper, turn mixture a few times. Add tomato to the top of the mixture.

  7. Allow the eggs to cook on medium heat for 2 minutes, pushing the sides of the omlette away from the sides of the pan to allow uncooked egg to flow underneath.

  8. Reduce heat slightly and allow to cook an additional 10-12 minutes.

  9. Sprinkle parmesean cheese over top and serve in wedges.
