you can substitute zuchinni, rice or eggplant if you wish

Recipe Ingredients for Vegetable Fritatta

6 eggs, beaten
1 potatoe, parboiled
1 tsp parsley
1 green pepper
1 onion
1 tbsp bread crumbs
1 T parmesan cheese, grated
2 tbsp olive oil

Recipe Directions for Vegetable Fritatta

  1. Saute onion and green pepper in olive oil until onion is tender in large fry pan.

  2. Diced parboiled potato and add to eggs.

  3. Add parsley, bread crumbs, and parmesan cheese to egg and potato and stir.

  4. Pour entore mixture into hot fring pan over the onion and green pepper.

  5. Cover and cook on medium heat for 8-10 minutes.

  6. Remove from heat when the edges are turning golden and leave for about thirty minutes.

  7. Turn upside down on plate and cut into 6 slices; serve warm.
