Bacon, Potato and Vegetable Fritata

Recipe Ingredients for Vegetable Fritata

4 tsp Olive oil
6 large eggs
1/4 tsp Salt
1/4 tsp Black pepper
2 tbsp Fat free half and half
2 slices Turkey bacon
1 small potato, white
1/2 small onion
1/3 Red bell pepper
6 oz White or Crimini mushrooms
1/3 cup Shredded Swiss cheese

Recipe Directions for Vegetable Fritata

  1. Cut bacon, into 1/4" by 1/2" pieces.

  2. Cut potato, onion and red pepper into 1/2 cubes.

  3. Cut mushrooms into 1/4" slices.

  4. Set rack at upper-middle level (about 6" beneath broiler) and turn on broiler.

  5. Combine eggs, half-and-half, 1/8 tsp each of salt and pepper. Whisk thoroughly (about 30-45 seconds) and set aside.

  6. To a 10" ovenproof non-stick skillet, add one tsp olive oil and, over medium-low heat, cook the bacon until crisp. Remove bacon and set aside.

  7. Add the other 3 tsp olive oil and saute potatoes, covered, stirring occasionally, over medium heat for 5 minutes.

  8. Add mushrooms, onions and peppers , the rest of the salt and pepper, and saute, uncovered, until tender and lightly browned (10-15 minutes).

  9. Combine the bacon and shredded cheese with the egg mix and pour into skillet.

  10. Stirring constantly, cook eggs until large wet curds have formed. Shake mixture to smooth it out, leave on burner for about 30 more seconds and put into oven.

  11. Heat under broiler until top is browned but middle is still not fully cooked (one or two minutes). Remove from oven and allow to rest for 3-5 minutes.
