Vegetable Fried Rice. Scrambled egg or cooked chicken, steak or shrimp can be added for protein.

Recipe Ingredients for Vegetable Fried Rice

1 cup whole grain rice
1 small carrot, diced
1/2 bell pepper, sliced
1 small onion, sliced
1 garlic clove, finely diced
1/2 teaspoon fresh ginger, finely diced
1 teaspoon soy sauce
1/2 teaspoon vinegar
1/4 teaspoon honey
1/4 tbsp olive oil

Recipe Directions for Vegetable Fried Rice

  1. Place rice in saucepan with equal amount of water, bring to boil. Once boiling, reduce heat to simmer and cover, about 10 minutes or until rice is tender.

  2. Put oil in hot pan and add vegetables and any protein desired. Cook until vegetables are tender. Add cooked rice to mixture and then add soy sauce, vinegar and honey to pan until liquid is absorbed.
