Fried Rice, inspired by Recipe Zaar

Recipe Ingredients for Vegetable Fried Rice

2 c. white rice
2 c. water
3/4 c. low sodium chicken stock
1 c. frozen peas
1 c. frozen corn
1 c. edamame
2 eggs
3 T canola oil
2 T low sodium soy sauce
1 medium onion, diced
3 garlic cloves, minced

Recipe Directions for Vegetable Fried Rice

  1. Cook rice in 2 cups water.

  2. Cool rice completely

  3. Heat 1 T oil in pan. Scramble eggs. Add veggies.

  4. Remove contents from pan. Heat 2 T oil in pan. Add rice, stir to coat.

  5. Slowly add chicken stock a bit at a time. Stir until all liquid is absorbed.

  6. Add eggs and vegetable mixture back to pan. Add soy sauce. Mix together.
