Recipe Ingredients for Vegetable Fried Rice

1/16 cup onion, finely chopped
1/3 teaspoon canola oil
1/3 teaspoon fresh gingerroot, minced
1/3 garlic clove, minced
1/2 tablespoon teriyaki sauce
1/3 tablespoon lime juice
1/4 teaspoon brown sugar
1/16 teaspoon salt
1/16 teaspoon hot sauce
2 tbsp rice, cooked (1/2 cup)
1 cup broccoli
1 cup carrots
4 oz chicken breast, meat only, roasted

Recipe Directions for Vegetable Fried Rice

  1. In a skillet, saute onion in oil until tender. Add ginger and garlic, saute 1 more minute.

  2. Add teriyaki sauce, lime juice, brown sugar, salt and hot sauce. Bring to a boil, reduce heat and cook and stir 2 minutes.

  3. Add rice and vegetables, cook and stir until vegetables are tender. Serve with grilled chicken breast.
