Easy vegetable fried rice. Lower calorie and lower fat than traditional recipe. Adapted from 'Looney Spoons'

Recipe Ingredients for Vegetable Fried Rice

1 tbsp extra virgin olive oil
1 cup onion, chopped
3 cloves garlic, minced
3/4 cup carrots, diced
3/4 cup celery, diced
1 tsp ginger root, grated
1/4 cup soya sauce
1 tbsp honey
4 cups white rice, cooked

Recipe Directions for Vegetable Fried Rice

  1. Add olive oil to a large non-stick skillet and place over medium heat. Add onions, garlic, carrots, celery, and ginger root. Cook and stir over medium heat for about 5 minutes, until vegetables are softened.

  2. Add soy sauce, honey, and cooked rice. Mix well. Cook for 2-3 more minutes, until heated through.

  3. Variations: * add cooked and scrambled egg substitute in last 3 minutes of cooking * stir in 1/4 cup diced green onion with other vegetables * add cooked chicken for a complete meal
