A healthy version of vegetable fried rice

Recipe Ingredients for Vegetable Fried Rice Healthy

3.75 Serving Rice
4 cup+chopped+raw On The Vine Tomatoes
2 cups cooked baby spinach
2 stalks celery
1/4 cup garbanzo beans
1 red bell pepper
1 serving Egg
1/2 cup chopped broccoli
1/4 cup red onion
2 tablespoons olive oil

Recipe Directions for Vegetable Fried Rice Healthy

  1. Boil in a bag whole grain brown rice

  2. Saute' onion, broccoli, red bell pepper and celery in 1 Tbsp of olive oil Add garbanzo beans to saute'

  3. Add fresh baby spinach to saute just before veggies are soft.

  4. Add one tomato as spinach shrinks. Leave on heat for minimum time.

  5. In separate sauce pan scramble 1 egg in olive oil add cooked brown rice to scrambled egg and mix

  6. Add saute' vegetable mix to rice and egg mixture.

  7. Try to keep vegetables crispy.
