Vegetable Fried Brown Rice Recipe

THE FRIED RICE IS GOOD SOLO BUT THE SHRIMP MAKE THE DISH TOP-SHELF

Recipe Ingredients for VEGETABLE FRIED BROWN RICE

3/4 cup dry brown rice
1 egg, beaten
3 tsp. vegetable oil, divided
1 tsp. minced garlic
1 tsp. minced fresh ginger
1 cup edamame
1/2 cup red bell pepper, diced
1/2 cup carrots, diced
1/2 cup scallions, bias-sliced
1 tbsp. low sodium soy sauce
1 tsp. toasted sesame oil

Recipe Directions for VEGETABLE FRIED BROWN RICE

  1. Cook rice according to package directions. After its done, spread cooked rice out on a baking sheet coated w/ nonstick spray. Cover w/ plastic wrap and transfer to the refrigerator to cool.

  2. Scramble egg in 1 tsp. oil in a non-stick skillet over medium heat until set, 1-2 minutes.

  3. Transfer to a plate to cool, then break egg into large chunks.

  4. Wipe out pan; return it to the burner over medium-high heat.

  5. Fry cold cooked rice in 2 tsp. oil until it starts to brown, 6-7 minutes; turn rice over with a spatula and brown 3-4 more minutes.

  6. Add garlic and ginger and stir-fry 1-2 minutes. Stir in veggies. Cook for 2-3 minutes to heat through.

  7. Fold in soy sauce, sesame oil and egg.

  8. Garnish with sesame seeds and cilantro leaves
