A dish of white rice, feta cheese, celery and red onion.

Recipe Ingredients for Vegetable Feta Rice

1 1/2 cups rice
3 cups water
1 cup red onion, chopped
1 cup celery, chopped
2 ounce feta cheese
1 tbsp olive oil
1 tbsp butter
2 tbsp red wine vinegar

Recipe Directions for Vegetable Feta Rice

  1. Place rice and water in a medium-size pot. Bring water to a boil, when boiled, reduce heat to a simmer, cover pot and let rice cook until tender

  2. In a large mixing bowl, combine red onion and celery. Crumble the feta into the bowl. Cover the vetgetable mixture with cooked rice, ocver and let sit for 5 minutes.

  3. Toss veggies and rice w/ feta and oil and vinegar.

  4. Serve
