Recipe Ingredients for Vegetable enchiladas

1 medium Squash, Summer, Zucchini, Includes Skin
3/4 cup Yellow Squash
0.5 medium raw Bell Pepper Green
3 medium (4-1/8" long) Onions, Spring Or Scallions
1 serving, raw Cilantro
2 clove Garlic
1/4 tsp Cumin
0.5 tsp Chili Powder
1 cup Corn, Sweet, Yellow
1/4 tsp Cayenne
1.5 1tsp Olive Oil
1.5 cup Nacho and Taco Shredded Cheese
5 tortilla 8" Low Carb Flour Tortillas 10ct
16 oz Ortega Enchilada Sauce

Recipe Directions for Vegetable enchiladas

Preheat oven 400degres. Saute chopped veggies in the oil. Add seasoning. Remove from heat and add 1/2 cup cheese. divide filling amoung the 5 tortilla. Roll up and place in a square pan. Cover with sauce and remaining cheese. Bake for 20 minutes.
