Vegetarian enchiladas with corn and spinach.

Recipe Ingredients for Vegetable Enchiladas

16 oz enchilada sauce
12 corn tortillas
16 oz black beans
10 oz spinach
10 oz corn
16 oz pepper jack cheese
1/2 onion
1 T olive oil

Recipe Directions for Vegetable Enchiladas

  1. Sautee onion in olive oil.

  2. In a bowl, combine filling of cheese, black beans, spinach, corn and onion.

  3. Add filling to tortillas and roll them.

  4. Place the tortillas in a baking dish seam side down.

  5. Cover with enchilada sauce and sprinkle with cheese.

  6. Bake at 400 degrees for 15 minutes.
