Recipe Ingredients for Vegetable Dolma with Beef from Olga's Healthy Choice

350 g Minced beef
100 g onion
5 g garlic
150 g tomatoes
80 g rice
50 g lemon
850 g Bell peppers
250 g eggplant
250 g water
1 tsp sea salt
1 tsp cumin
1 tsp oregano
1 tsp parsley
1 tsp red pepper flakes

Recipe Directions for Vegetable Dolma with Beef from Olga's Healthy Choice

  1. Preparation of stuffed vegetables: Cut eggplant half and clean inner side carefully with a coffee spoon trying to keep 7 mm meat inside the skin.

  2. Remove the cabs of bell peppers, clean inner side.

  3. Wash the suffing vegetables and let aside.

  4. Clean the cabs and keep aside.

  5. Then make some fine cuts with the end of knife in order to ease the cooking later

  6. Preparation of stuffing mixture: In a large bowl, put grinded onions (or finely chopped), garlic (finely chopped), tomatoes (finely cut), meat, rice and other ingredients. Gring 1/2 fresh lemon along with skin. Add 150 g water and bring a good mix.

  7. Let it wait for 10 minutes.

  8. Prepare a large and deep cooking pan. Place some sliced (5 mm) potatoes (this is just a kind of laying foundation. Any sliced vegetable will do well.) in the bottom.

  9. Suffing: Try to stuff the prepared vegetables in full one by one and try to put a piece of inner part from eggplant on top of each filled vegetables. Place each of them side by side in the pan.

  10. Add 100 g water.

  11. Bring to boil on medium heat, then cook on the low heat for about 25-30 minutes.
