Use any comination of vegetables that you prefer, bok choy and cabbage varietites work very well, as do capsicums.

Recipe Ingredients for Vegetable delight

1 cup, chopped Broccoli
1.5 cup (1" cubes) Pumpkin
0.67 cup, chopped Carrots
1 stalk, large (11"-12" long) Celery
62 1/2 grams Beans, Snap, Green
1 serving Extra Virgin Olive Oil

Recipe Directions for Vegetable delight

Microwave for 7-10 minutes until veges are cooked, shake through seasoning and oil leave to stand for a few minutes before serving. Serve with lean chicken breast on the side for a healthy, nutritious meal.
