Vegetable Curry Recipe

This is my own home made recipe and I would suggest to have this curry with mash potatoes or chapati. IT IS A HEALTHY MEAL MADE OUT OF 100% vegetables and no added salt and no ready made purees or sauces.

Recipe Ingredients for Vegetable curry

2 tomato Tomatoes, Red, Ripe
2 clove Garlic
1 cup Spinach
1 large Onions
2 carrot (7-1/2") Carrots
1 Medium Tomatoes
0.5 tsp Spices Ground Black Pepper
0.5 tsp Cinnamon, Ground
1 tsp Curry Powder
1/4 tsp Rosemary
0.25 tsp Paprika
2 Teaspoon Juice
0.25 tsp Cloves, Ground
2 medium (2-1/4" to 3-1/4" dia.) Potatoes, Boiled
2 tbsp Vegetable Oil
1 serving Organic Unsweetened

Recipe Directions for Vegetable curry

  1. The first step is to boil two potatoes until they are fully soft but not mushy.

  2. Blend two tomatoes with two garlic's and half an onion and a cup of spinach.

  3. Next, chop one tomato, two carrots and half the other onion into how you would prefer them to be cut.

  4. Once the potatoes have been boiled, peel the skin off and cut the potatoes in big chunks since they will separate into small sizes when the puree has been added.

  5. Add one to two spoons of vegetable oil or any other desired oil.

  6. Add the chopped onions in first until the are half cooked. then add the carrots and lastly the potatoes.Fry them for about 3 to 5 minuets and if it is getting dried up at two spoons of Soya milk.

  7. Add the blended ingredients and stir. While stirring you can add half a tsp of black pepper, one tsp of curry powder, half tsp of cinnamon, quarter tsp of paprika,quarter tsp of ground cloves and a quarter of rosemary spice.

  8. Lastly add a full spoon of freshly squeezed lemon.

  9. Keep stirring for 5 to 10 minuets.
