using whatever vegetables are around, serve with rice

Recipe Ingredients for vegetable curry

6 potatoes
1 cup Asparagus
3/4 cup Yellow Squash
1 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 medium Onions
2 tbsp Butter
1/4 cup Thai Red Curry Sauce
1 cup skim milk
2 medium Tomatoes

Recipe Directions for vegetable curry

cook all vegetables except tomatoes in butter. add curry sauce and coconut milk, bring to a boil on high, add tomatoes, simmer and stew with top. serve with rice.
