A general vegetable curry recipe; the cauliflower was originally kohlrabi. Replacing roasted vegetables is okay!

Recipe Ingredients for Vegetable Curry

2 cup, chopped Squash, Summer, Zucchini, Includes Skin
2 cup Cauliflower
1 cup, chopped Carrots
12 clove Garlic
2 tbsp Olive Oil
1 medium (2-1/2" dia) Onions
2 medium raw Tomato Roma
1 tsp Cumin Seed
1 tsp Spices Mustard Seeds
1 tsp Coriander Seed
0.13 cup Lemon Juice
2 tsp Curry Powder
1 tsp Pepper, Red Or Cayenne
1 tsp Salt, Table

Recipe Directions for Vegetable Curry

  1. Chop cauliflower, carrots, zucchini and tomato; dice onion; mince garlic. Drain and rinse chickpeas.

  2. Toss cauliflower, zucchini and carrots 1tbsp olive oil and about half the garlic. Roast at 450F for about 25 min.

  3. Heat 1tbsp oil and 1/4 cup water over med-high heat. Add cumin, coriander and black mustard seeds. When they start to sputter (~1min), add diced onion and cook until soft. Add diced tomato and cook another 1-2min until soft.

  4. Add lemon juice, curry powder, cayenne, salt, remaining garlic, chickpeas, 1/2 cup water, and roasted vegetables. Simmer until water is mostly cooked off.

  5. Serve over basmati rice.
