Recipe Ingredients for Vegetable Curry

257 grams Carrots
170 grams Peppers, Sweet, Red
170 grams Cauliflower
1 Can Chick Peas
400 grams Tomatoes
173 grams Beans, Snap, Green
2 tsp Ginger Root
3 clove Garlic
15 grams panch phoran
2 tsp Turmeric, Ground
10 grams Peppers, Hot Chili, Green
2 tsp Chili Powder
4 Teaspoon Curry Powder
2 tsp Exotic Indian Spices

Recipe Directions for Vegetable Curry

  1. boil 250g of onions until soft,drain and puree.

  2. Heat the oil add the panch poran and fry until the seeds start to pop

  3. slice the remaining onion and add to the pan. fry until soft and golden.

  4. Make a paste of the garlic ginger turmeric curry powder and chilli powder mixed in a little water.

  5. Add to the pan and fry for two minutes.

  6. Add the previously chopped vegetables and stir.

  7. Then add the onion purée tomatoes and simmer until the vegetables are cooked.

  8. Add the chick peas and tomato purée and heat through.

  9. Then add the garam masal stir and cook for two minutes.

  10. loosen the mix with a little water if required.
