Vegetable Curry Recipe

Use as a base for chicken curry or just as a yummy yummy dinner all by itself. I left a lot of the seasonings out as they were being a pain and I also left out the water that I added as the analyzer doesnt take into account water evaporating so it messes with the calorie count. Plan on using at least 3 cups of water, cayenne pepper to taste, ground ginger to taste, crushed red pepper to taste, and lemon juice (about 1/4 of a tsp per serving). I also started the curry using premade mashed potatoes that were sitting around.

Recipe Ingredients for Vegetable Curry

5 yukon gold potatoes
1/2 cup skim milk
2 cups chicken broth, reduced sodium, 1 can
1 tbsp oil
6 tbsp curry powder
2 tsp sugar
2 tbsp tomato paste
1/2 lb baby carrots
1 cup frozen peas
2 medium onions
2 cloves garlic
1 tbsp cream, sour, reduced fat, cultured

Recipe Directions for Vegetable Curry

  1. heat a tbsp (or less) of the oil over medium heat, add onion, coarsely chopped. Stir until starting to carmelize. Add curry powder and stir until toasted, toss in crushed garlic cloves and stir until fragrant (about one min).

  2. if using mashed potatoes, just toss them in with the mixture, stir till combined, stir in 1 cup water and 1 can broth.

  3. if using regular potatoes, cut up into 1 to 2 inche pieces, toss with onion mixture and stir for about 10 min as the potatoes soften and take on the flavors. then add the water. add the rest of the seasoning as the flavors develop, adjusting as necessary and to taste. the tomato and the sugar are necessary for depth of taste.

  4. let potatoes get somewhat softened before adding carrots, cook until carrots are almost done then add any other veggies that you plan on using.

  5. serve with a touch of lemon juice and a tbsp of reduced fat sour cream.
