Modified from Indian Cookbook, vegan recipe is high is fiber and protein

Recipe Ingredients for Vegetable Curry

2 tablespoons canola oil
2 yellow onions
1 teaspoon chili powder
1 tablespoon ground coriander
1 1/2 tablespoon fresh ginger, chopped
1 tablespoon salt
2 medium potatoes, cubed (4 small)
1 large eggplant, cubed (1 large)
1 1/2 cups peas
4 green chili peppers, chopped
15 ounce tomatoes, canned with juice
1/4 cup water

Recipe Directions for Vegetable Curry

  1. Saute onions in canola oil until onions are soft and golden, about 5 minutes. Add chili powder, ground coriander, ginger and salt and saute about 2 more minutes.

  2. Add potatoes, eggplants, peas, chili peppers and tomatoes and cook for 30 minutes or until potatoes and soft.

  3. Serve over quinoa cooked with vegetable broth.
