Recipe Ingredients for Vegetable Curry

1 1/2 cup coconut milk
2 cup water
3 tbsp unsalted butter
2 medium onions
2 tsp ginger
4 cloves garlic
1 1/2 tsp turmeric
2 tsp cumin
2 tbsp black pepper
1/8 tsp cayenne pepper
2 carrots
1 1/2 lb cauliflower
1 cup green beans
16 oz tofu
1/2 tsp salt

Recipe Directions for Vegetable Curry

  1. Melt butter in large skillet over medium heat. Add the onions, ginger, and garlic and saute. Toss every 10 minutes or until onions begin to brown.

  2. Sprinkle on the spices and stir to mix thoroughly. Cook for 2 minutes to blend flavors.

  3. Stir in coconut milk and bring to boil. Add the carrots, cauliflower, green beans, tofu and slat. Toss to coat the vegetables with the sauce. Cover and cook 5 minutes. Remove cover and continue to cook the curry tossing often until the veggies are tender and sauce has thickened (about 10 min)

  4. Serve with some rice on the side.
