A vgetable curry made in a pumpkin sauce

Recipe Ingredients for Vegetable Curry

1 cup cauliflower, chopped
1 cup of broccoli, chopped
1 1/2 cup pumpkin, soup
1 onion, sliced
1 medium carrot, sliced
1 tsp garlic, chopped finely
1 tsp ginger, chopped finely
2 tbsp mild curry powder
1/2 cup water
1 tsp olive oil

Recipe Directions for Vegetable Curry

  1. Heat the oil in a heavy pan and cook garlic and ginger in with the onion

  2. Add the pumpkin soup or puree

  3. Add the mild curry powder and mix into the sauce

  4. Par-cook the carrots in the microwave

  5. Par-cook the cauliflower and the broccoli in the microwave so that are not fully cooked through

  6. Add the vegetables to the pumpkin sauce

  7. Mix in and cook on a low heat until the vegetables
