A quick and easy curry- that is also very healthy!

Recipe Ingredients for Vegetable Curry

1/4 tinned tomatoes
1 onion
15 g butter or oil
4 cups mixed vegetables
58 g fresh coriander
1/2 teaspoon salt
1 1/2 teaspoon garam masala

Recipe Directions for Vegetable Curry

  1. Put the butter and chopped onion into the pan. Leave the onion slightly chunky for better flavour. Cook on low heat until brown. Turn up the heat once onion is a golden brown colour and then add the chopped tomatoes. Add salt and garam masala and let simmer for 5 mins on low heat.

  2. Turn the heat up again to full and add the mixed vegetables. Stir in for 5 minutes and then reduce the heat to low. Let cook for about 20 mins.

  3. Turn the heat up again and stir for about another 5 minutes, drying out all the water. Add the coriander and stir for another 2-3 mins.

  4. Serve while hot with chappatis or rice.
