A yummy curry that will taste great plain or over jasmine rice.

Recipe Ingredients for Vegetable Curry

1 cup, chopped Squash, Summer, Zucchini, Includes Skin
2 medium Carrots
1 medium (2-1/2" dia) Onions
1 cup, chopped Broccoli
1 cup, chopped Peppers, Sweet, Red
1 tbsp Red Curry Paste
14 oz Lite Coconut Milk

Recipe Directions for Vegetable Curry

Cook all the vegetables leaving broccoli and peppers out. Add curry paste and coconut milk. Add broccoli and peppers and cook until all vegetables slightly soft. Serve plain or over jasmine rice
