Recipe Ingredients for Vegetable Curry

1 eggplant, cut into thick slices
1 tbs olive oil
2 cloves garlic, crushed
1 oz ginger - fresh, peeled and sliced
1 large onion, chopped
2 tbs red curry paste
2 potatoes, peeled and cubed
2 carrots, peeled and cubed
1 kg butternut pumpkin, seeded, peeled and cubed
1 green pepper, seeded and chopped
1 cup cauliflower, cut into florets
425 g tomatoes, can of chopped
1 cup lite coconut milk
2 tbs herbs, chopped (basil or oregano)

Recipe Directions for Vegetable Curry

  1. Sprinkle egglant with salt and leave for 30 mins. Rinse well and pat dry and cut into cubes.

  2. Heat oil in a large saucepan and add garlic, ginger and onion, cooking gently to soften.

  3. Stir in curry paste over low heat.

  4. Add vegetables and canned tomatoes and stir well.

  5. Cover tightly and bring to boil, then simmer until vegetables are tender, 20 to 40 mins.

  6. Add coconut milk and simmer for a further 5 mins. Add herbs and stir well.
