Recipe Ingredients for vegetable curry with couscous

3 tbsp olive oil
1 red onion
1 white onion
2 cloves garlic
3 red bell peppers
2 medium eggplant
4 medium potatoes
2 large zucchini
1/2 cup baby corns
2 cups chickpeas
1 tsp salt
1/2 tsp black pepper
2 chili peppers
14 oz canned diced tomatoes
1 tbsp tomato paste
1/2 tsp cumin
2 cups veg broth
2 tbsp cilantro
1 1/2 cups cooked couscous

Recipe Directions for vegetable curry with couscous

  1. Heat the oil. Add onions and garli and saute 5 min.

  2. Add bell peppers, eggplant, potatoes, zucchini, corn, and garbanzo beans. Stir well an saute 5 min.

  3. Add salt, pepper, chilis, tomatoes, harissa, cumin and broth. Stir well and cover tightly. Simmer 30 min. Sprinkle with cilantro and serve with couscous.
