Any root veg are good, plus baked beans can be added

Recipe Ingredients for Vegetable Crumble

110 g peas
225 g celery, trimmed and chopped
225 g carrots, diced
225 g courgettes, diced
2 tsp cumin
2 tsp coriander
1 tsp turmeric
1/2 tsp chilli powder
1/2 tsp ginger, grated
225 g onions, chopped
2 cloves garlic, crushed
2 tblsp olive oil
1 tblsp tomato paste
400 ml stock
1 Salt and pepper
75 g wholemeal flour
50 g butter
75 g oats
2 tblsp olive oil
1 Salt and pepper
75 g cheddar

Recipe Directions for Vegetable Crumble

  1. Pre-heat oven to 190c

  2. Mix spices with 2-3 tblsp water to a paste

  3. Heat oil in a large saucepan and fry onion and garlic until soft

  4. Add spice paste and cook for 5-8 mins stirring frequently

  5. Mix in diced veg and cook for 2 mins

  6. Add tomato, paste, stock and S&P - bring to boil - cover and simmer 15 mins

  7. Put mix in greased oven dish

  8. Melt butter and mix with flour and oats - mix in oil

  9. Sprinkle over veg mix

  10. Sprinkle with cheese and bake 25-30 mins
