Brightly colored mixed vegetable couscous dish

Recipe Ingredients for Vegetable Couscous

1 sweet red pepper, chopped
4 mushrooms, chopped
15 baby carrots
2 cups broccoli, chopped
2 cups spinach, chopped
1 onion, diced
1 tsp garlic, minced
2 tbsp curry powder
1 tbsp turmeric
3 cups vegetable broth
2 cups whole wheat couscous

Recipe Directions for Vegetable Couscous

  1. Spray soup pot with nonstick spray and saute onions and pepper until tender.

  2. Add carrots, broccoli, spinach, and spices, and saute for 4-5 minutes.

  3. Add vegetable broth and bring to a boil. Reduce heat and cover. Simmer for 30 minutes or until carrots are tender.

  4. Remove from heat and stir in couscous.

  5. Cover and let it sit for about 5 minutes, then serve.
