Recipe Ingredients for Vegetable Corn Cakes

1 cup corn meal
1 cup whole wheat flour
1/4 tsp salt
1/8 tsp pepper
1 tsp thyme
1/2 cup carrot, grated
1 tbsp garlic, minced
1/3 cup zucchini, grated
4 ounces yogurt or soy yogurt
3/4 cup soy milk
2 tbsp extra virgin olive oil

Recipe Directions for Vegetable Corn Cakes

Mix dry ingredients in large bowl. Add veggies. In a separate bowl, whisk evoo, yogurt, and milk, poor into 1st bowl. Mix with wooden spoon until moist, kinda like pancake batter but a little thicker. Thin with soy milk if need to. Cook on heated griddle just like you would pancakes.
