This is a vegetable/broccoli chowder that is the perfect comfort food for a winter day!! I use this as a meal!!

Recipe Ingredients for Vegetable Chowder

1 T olive oil
3 celery stalks, large, chopped
1 onion, large, chopped
3 carrots, chopped
1 potato, russet, flesh and skin (1 large or 2 medium), chopped
1 T flour
1/4 t cayenne pepper
1/4 t garlic salt
1/2 t dry mustard
2 cloves garlic
2 cans chicken broth
1 stalk broccoli, large, chopped (separate stems and florets)
10 oz can corn
1 cup sour cream
2 cup cheddar cheese, shredded

Recipe Directions for Vegetable Chowder

  1. heat oil in dutch oven over medium-high heat

  2. Add onion, carrot and celery

  3. Cook stirring often, until the onion and celery soften (5-6 minutes)

  4. Add potato and garlic, cook, stifring for 2 minutes

  5. Stir in flour, dry mustard, garlic salt and cayenne, cook stiring often for 2 minutes

  6. Add broth and broccoli stems and bring to boil

  7. Cover and reduce heat to medum, simmer, stirring occassionally for 10 minutes.

  8. Stir in Florets, simmer, covered until the broccoli is tender (about 10 more minutes)

  9. Transfer 3-4 Cups of the chowder to a bowl and mash (or use food processor) and return to pan

  10. --

  11. Stir in cheddar and sour cream

  12. Cook over medium heat stirring until the cheese is melted and the chowder is heated through (about 2 minutes)
